♻️ Rename the overlay schema version to the holder name

schema-version is the future cache-invalidation key of the
relation overlay and lives only in in-memory session metadata,
so the literal takes the holder name while nothing persisted
compares it. The Ladybug tier's persisted penpot-graph-slice-4
in GraphMeta is untouched.
